I'm currently a WAR/MNK, but I'd really like to try WAR/NE without going through the trouble of recreating my character.

Is there a way to change my secondary profession?

I'm pretty sure when I picked Necromancer as my secondary profession, the Necro Trainer text said it was permanent, which is why there was a second confirm dialogue when asked.

exactly you cant take it back once you decide.

I thought you could change secondaries through a quest after ascension... otherwise I have some character deletion to do...

ArenaNet has always told us that after Ascention there is a way to change your secondary. I just haven't heard about anyone actually doing it yet.

Yeah, it is, or will be possible... It was talked about in one of the Fansite Fridays... but it you want to change him now, then you need to restart.

Amris Ammir( Second Proffesion Quest Giver) Cleary states that you cannot re-choose your secondary proffesion.

So does the trainer who offers you the proffesion.

Yup after ascension (Droknars Forge) you can change your secondary.

Once you can progress in the game and "Ascend", you'll gain the ability to change your secondary profession. Up until that point, there's no way to change your secondary without recreating your character.
